The limited edition Single Grain Irish Whiskey 31 Year Old has been matured in an ex-Bourbon cask for 31 years. The rare single cask release has developed a “full deep grain character” and on the palate notes of “honey, juicy mango and ripe melon with an endless dark wood and spicy finish”. The expression, which includes three single cask offerings, is bottled without chill filtration and ranges from 51.3%, 51.8% and 52.5% abv. The current bottling we have in stock is cask 21614 and was limited to 84 bottles.

This M&M release started it's life in both bourbon and sherry casks before being finished in Wild Cherry wood casks. Cherry timber is semi-ring porous as opposed to ring porous like oak and chestnut. Meaning that it is not as strong or water-tight when used for coopering. Notes of fine wine, capers and ginger spice. Limited to 2,500 bottles.

Titled 'American Whiskey' rather than bourbon because, unlike bourbon, this has been aged in previously use barrels which are described as having been 'bourbon soaked'. This is rated very highly amongst the new breed of American distilled whiskeys. Deep butterscotch and vanilla notes, hints of caramel and dried fruit with a ripened fruit finish.
