One of the mere 711 bottles produced. Initially aged in fresh ex-bourbon casks followed by a finishing period in an 80 year old Palo Cortado sherry cask. Incredible mouth-feel with a thick, viscous texture. Flavours of warm spices, toffee, creme caramel, baked fruits, sultanas, dates, chocolate brownies and walnuts.

A double distilled single malt initially matured in an ex bourbon barrell before being finished for almost 3 years in a Anima Negra red wine cask from Mallorca. Limited to only 334 bottles. Sweet and fruity, well balanced with flavours of sweet orange, Christmas cake and milk chocolate.

Celtic Cask “Ceathair” was matured in 1st fill Bourbon casks for 10 years. In December 2011 it was emptied into a Madeira cask from Vinhos Barbeito – A producer of exceptional quality Madeira. Waves of citrus, melon and tropical fruit flavours hit you. Complex fruit including white grapes, ripe galia melon, sultanas, figs and lychees.

Celtic Cask Ceathair Deag

The Celtic Whsikey Shop in Dublin filled an Alestino estate wine cask with an unpeated single malt that had spent 11 years in a bourbon cask. Three years of further maturation has given this malt a beautiful chocolate bronze colour. The whiskey has picked up lots of the rich raisin and coffee flavours from the Brunello di Montalcino Italian red wine, which lingers long into the finish.

Celtic Cask Cuig

Celtic Cask “Cuig” was triple distilled in Ireland in 1991 and was matured in a first fill Bourbon cask for over 13 years. It then spent the next 8 years out of cask before we rescued it from the angels grasp! It was bottled as a Celtic Cask in September 2013. This is Irish Single Pot Still whiskey from a distillery who's identitiy we are not allowed to reveal.

Celtic Cask Cuig Deag

This is a rare and truly special treat. In the late 1980s and early 1990s an Irish distillery was making batches of a style of whiskey it's not usually associated with - double-distilled, peated single malt. After 22 years maturing in a bourbon cask, the Celtic Whiskey Shop transferred it to a port pipe from one of Portugal's finest wine makers, Quinta do Noval, where it spent a further two years. The extra maturation has given the malt great complexity and bold, fruity flavours. Highly recommended.

Celtic Cask Deich

A delicious, peated single malt that was double distilled and initially aged for eleven years in an ex-Bourbon barrel. It was then transferred into a red Rhone wine cask from Domaine Des Anges for an additional finishing period of around four years.

Celtic Cask Do 2001

The whiskey was initially aged for 10 years in a second fill bourbon cask. In October 2011 this cask was emptied to fill an Ànima Negra Mallorcan red wine cask. Dry & bold on the palate with an instant punch of peat smoke. With time it becomes more sweet fruit dominated with flavours of dried fruits, red apples, orange peel and a hint of toasty oak.

Celtic Cask Do Dheag

Celtic Cask Do Dheag is a double distilled Irish single malt that was initially aged in a Bourbon cask for 10 years. This was followed by nearly 5 years in a red wine Syrah barrel from Domaine Des Anges based in the Ventoux area of France's Rhone valley.

A richly flavoured and smoky single malt that was initially matured in a single Bourbon cask then tranferred into a Vinhos Barbeito Madeira cask for finishing. The combination of smokiness along with some rich, dried fruit characters from the Madeira cask work really well together.

Anima Negra is a highly regarded winery on the island of Mallorca, they make some of the finest red wines in Spain, predominantly from local grape varietals. We have released several whiskeys that have been finished in their fine French oak casks and this is one of the best. These casks seem to have a great affinity with Irish whiskey and they tend to add delicious flavours of cola, spice and dried citrus fruits.

Celtic Cask Se 1991

This is a double distilled single malt, but curiously it comes from a distillery more famed for triple distilled malts. It spent around four months in one of our Anima Negra red wine casks which has added to the fruitiness and spiciness of the whiskey. Aromas of fig jam, dried apricots, mace, citrus and pineapple. On the palate it is fruity and densely textured with flavours of apricots, exotic spices and dried fruits. Warming and spicy on the finish.
